Alessio grew up in a small town in “La Marche”, a rural region located between the hills of the Apennines and the Adriatic sea, he was surrounded by a variety of traditional, fresh homemade foods.

Upon graduating from catering school in Italy, Alessio traveled Europe, working in Italian, Spanish and Latino restaurants and bakeries in Spain, Ireland and the UK.
